It doesn't have to be difficult to taste good

Quick and Easy Broccoli soup

1 tablespoon olive oil

1/2 sweet onion chopped

1/4 cup chopped leek

2 cups veggie broth 

3 cups broccoli

1 teaspoon dijon mustard

1 cup unsweetened almond milk

Heat olive oil add onion, leek saute add broccoli and broth simmer for 30 add dijon and almond milk simmer 8 more min.

Season with salt and pepper pour in blender and blend.

You can top with shredded cheese or a pinch of cayenne and lemon zest.

This makes a great snack, side to a salad or appetizer. 

The healthier you get the happier you get..
